Today I am going to prepare ‘Beef ularthiyathu / Kerala style beef fry Let’s see how to make this dish and the ingredients needed for this dish :

  • Diced beef ½ kg
  • Chopped ginger 2 tbsp
  • Chopped garlic 1 ½ tbsp
  • Chilli powder  1tbsp
  • Turmeric powder ½ tsp
  • Corrainder powder 2 tbsp
  • Fennel seeds powder 1 tbsp
  • Salt as needed
  • Curry leaves  as needed

I have cooked the beef almost with the above ingredients . The reason why we don’t cook the beef fully is that later when we fry it , it will be cooked. Here I will be frying the beef once cooled so that a darker colour and tastier version could be made.

So for frying we need:

  • Coconut oil: 3-4 tbsp You could reduce the amount of oil according to your wish.
  • Mustard seeds 1 tbsp
  • Chopped onion 1
  • Chopped small shallots 15
  • Chopped garlic 4
  • Black pepper powder 1 ½ tsp
  • Fennel seeds / sweet cumin ½ tsp
  • Curry leaves few

Now lets see how to prepare this dish . I have heated a pan and poured some oil. Once hot, add the mustard seeds and let it pop. Now add the curry leaves, onion, shallots and garlic and saute it. Once half sauted, add the fennel seeds powder and black pepper powder and roast it.

After about a minute or 2 , add the cooked beef with its juice as well. Mix well and inorder for it to cooked further close the lid and put it on a medium flame. After about 10-15 minutes ,mix well and depending upon how mature the meat is cook it further. Here the meat is cooked and now I am not going to apply the lid as I am intending to fry the meat. So while you are trying to fry this make sure you regularly mix the meat so that it does not get burnt.

So now as you see the meat as become darker and the gravy has dried off as well. Make sure you don’t fry it on full flame as it will burn the meat and masala’s . We see the onions and garlic here as we added the meat when the onions were half sauted, that makes it colourful. Now let’s dish it out. So here the tasty beef ularthiyathu / beef fry is ready. So we have added very few spices here. So you have seen how we could make this beef fry which is tasty, colourful . A good combination with dish is to have some bitter gourd thoran and yoghurt curry and rice. I am sure you will all enjoy it.
