Candied honey orange peel Wash and clean oranges cut into 4 – 6 wedges remove the peel cut into thin slices, 5-7mm wide add peel and water into a pot boil then cook on medium heat for 3 – 4 mins drain and wash with cold water repeat these steps of cooking and washing peel with cold water 1 – 3 times until the bitterness in the peel has almost gone soak the peel in water with salt for 4 – 8 hours drain, wash again with cold water, shake well to remove water for every 100 gram peel, add 125 gram caster sugar and 50 gram honey (for every 100 g peel) mix lightly leave 4 – 8 hours until sugar and honey turns into clear syrup add water so that it almost covers the peel in the pot simmer at low heat in 60 – 100 minutes until most of the water has evaporated and the peel turns translucent place these candies on a rack let them air-dried at a cold and dry place or dry them in the oven at 100-110 deg C in 10 – 20 mins the candies should be crunchy, chewy, sweet with honey and citrus flavor (optional) cover with sugar (optional) or dip in melted chocolate.
