Served were a significant hit at Sandals, favorite all over the island, and our Bajan Fish Cakes. These fish cakes are simple to prepare and ideal for even a football party or a lavish dinner. One scotch pepper cap, seeds removed and diced, or 1 tablespoon Bajan pepper sauce.
Soak salted codfish for at least 4 hours, and overnight water at least of 3 times in water. In a skillet heat the oil and saute the pepper. Sift the flour, baking powder and salt\/pepper in a bowl.
