Served were a significant hit at Sandals, favorite all over the island, and our Bajan Fish Cakes. These fish cakes are simple to prepare and ideal for even a football party or a lavish dinner. One scotch pepper cap, seeds removed and diced, or 1 tablespoon Bajan pepper sauce.


Soak salted codfish for at least 4 hours, and overnight water at least of 3 times in water. In a skillet heat the oil and saute the pepper. Sift the flour, baking powder and salt\/pepper in a bowl. Create a well in the middle and pour milk egg and butter and mix. Fold in chives, sweet peppers, hot pepper, corn, onions, and fish. In case the batter is too watery, add sifted flour to attain the desired consistency. In even a large deep pan or deep fat fryer, heat oil to also a temperature of 340 degrees F.


Drop batter by the tbsp into hot oil, but don’t crowd. Fish cakes can be kept warm in a 250 degree F oven, until ready to serve. Serve using Bajan tartar or sweet chili dipping sauce. Mix all ingredients in a bowl and chill a minimum of one hour before serving.
